Fresh Trout – How to Cook this Delicate Fresh Water Fish. fried fish recipe

I'm your family's personal chef Mike Moses I live on the east coast of Nova Scotia I have access to all kinds of fishing and coming up today we're going to cook trout that is if I can catch one if you like this video please don't forget to click the thumbs up icon and if you like more of these please subscribe a few people have asked how to cook trout be it farmed or wild trout is one of the best tasting freshwater fish many varieties of trout ranging from brook trout brown trout – lake trout – rainbow trout that can grow up to 5 to 7 pounds fishing for these takes patience and it can be from a spinner in the spring to fly fishing in the summer whatever way you catch your trout cooking it properly brings out the flavor and texture of a beautiful fish we're going to cook brown trout fillets today with some Brussels sprouts here's what we will need 1 brown trout fillet 1 pound of Brussels sprouts 900 mils of unsalted chicken stock 1 tablespoon of grapeseed oil 2 tablespoons of butter kosher salt and pepper first let's get the sprouts ready they'll boil in the chicken stock for about 15 to 20 minutes to clean our sprouts and gain optimal cooking you must cut the bottom off of each sprout to allow the outer leaves to be peeled off then cut an X in the bottom of each Sprout put your clean sprouts in a pot cover with chicken stock add about 1 teaspoon of kosher salt and bring to a boil reduce the heat to medium and then let boil for about 15 minutes In order for us to get a crispy skin on our Trout we want to make sure that we have it dried off both sides because you don't want to steam your fish season them a little bit of kosher salt not much put your frying pan on a medium high heat and wait a couple of minutes add the grapeseed oil than the butter one mistake a lot of cookss do is not to let your pan come up to the proper temperature when the butter starts to bubble put your trout in and don't touch it for at least three minutes we are going to develop a crispy skin this can't happen if you move the fish around after three minutes baste the fish for about 30 seconds and then turn over gently turn off the heat and you should be done take your Brussels sprouts and put a little pile on the plate then take your trout and place on the plate skin side up there is a nice presentation a perfectly cooked crispy skin trout with Brussels sprouts if you liked this video please leave me a thumbs up and if you would like to see more of these and subscribe I post new videos every Sunday while you're over at the personalchef
